Wow it is a beautiful day, beautiful week, the weather is warm and sunny. How is everyone doing? Are you getting in the mood for summer? We were in winter for so long it's almost surprising to actually feel the sun shining on the skin.
Tuesday June 4th was a special little ladies birthday... my dog Yuki! I've always seen people online making cupcakes and cakes for their dogs on their birthdays and I've always wanted to be that extra. I would be lying though if I said I wasn't curious what a pup-cake tasted like, and thankfully I found a recipe that would be good for both dogs and humans!
This recipe, although small, is healthy and a great alternative for your kids or yourself (as long as there is no peanut butter allergy) to a regular banana bread pastry, because the only sweetener in this recipe is honey and banana! How amazing is that? Best part that it also has a frosting! Literally just banana and peanut butter.
As well as being sweetened with honey, this recipe is dairy free and egg free.
So I decided to document my journey of the cupcakes, so that I could give y'all the recipe as well!


This recipe makes about 4 small-regular sized cupcakes so if you want more than that make sure to double or triple the recipe.
All you need is:
-1/2 cup flour
-1/2 tsp baking soda
-1/4 tsp baking powder
-2 tbsp oil
-1 medium banana
-2 tbsp honey
-2 tbsp peanut butter
And then for the frosting you need:
-1/2 medium banana
-2 tbsp peanut butter
Before mixing everything together, preheat the oven to 350 degrees.
First you will want to mash the banana; make sure to pick a super ripe one to make it easier to mix together with the other ingredients. Then you will mix the peanut butter, oil, and honey into the banana mash.
Once all of the wet ingredients are mixed thoroughly together, you add in the baking soda, baking powder, and flour (slowly add this in so that it can mix properly).
Put the cupcakes into the oven for 10-20 minutes depending on how big you made them. I had to leave mine in for 20 minutes since I filled them right to the top of the cupcake liners. While your cupcakes are baking, all you do for the frosting is simply mash the 1/2 medium banana and mix it with the 2 tbsp of extra peanut butter; put it in the fridge to let the frosting harden a little bit.
Once your cupcakes are done just let them cool down, add that frosting, and celebrate your puppy's birthday! Or enjoy it yourself. I loved them! Even two days later they are still super soft and as delicious as the first bite. The banana in the frosting will turn brown, don't freak out, that's just what bananas do once they get taken out of their peel, it will not make you sick.
I hope you enjoy this recipe as much as I did! And even though the title says pup-cake, no one is gonna judge you if you make these with zero intentions to give to your little furry friend.
